Viola’s, Mariposa’s or Peg’s can never really be duplicated 100% outside the area; that is because the bread is not easily found. But here is the general sub – Start with Rib-eye loin and have the butcher slice the meat about 1/8 inch no more then 3/16. Fry in thin film of oil (Gem) is best, but if you don’t have “Gem” good vegetable oil with 10% olive oil will make up the “Gem” formula. Flip meat once and lay on some American White Cheese, cover with pan top until melted and then slip on your bun with your favorite toppings (Tomatoes, Onion, peppers, olives and lettuce). Then dress with salad dressing; their house dressing consisted of oil (Gem) and seasoning which we determined was oregano, thyme, basil and a few red pepper flakes mixed in the oil to give it some flavor. Salt & pepper was separate. I am sure someone else can give the exact recipe but this is what I can remember. Good luck finding light crusted bread with a center that can absorb the juices from the toppings and dressing.
